Mark and Elaine, Atlas owners, discovered Four Pillars, on their trip to Australia, last year.
As a result, Stu Gregor, one of the owners, and distillers, of the brand, came up to Atlas, in 2016, and did a Gin Masterclass with our full team.
A lifelong Manchester United fan, he was thrilled when presented with a Man U. shirt, depicting Gregor and a number 4, on the back!
We are equally excited to have had someone here, from the other side of the world, training our team!
The distillery is situated in the heart of the Yarra Valley, in Victoria, Australia.
Why Four Pillars?
Well that’s the still, the water, the botanicals and the love! We can absolutely vouch, first hand, for how much this team love their product!
Their copper pot still is named Wilma, after one of the owners Mum’s.
The water is triple filtered and sourced from the Yarra Valley.
Local botanicals are used such as Tasmanian Pepper berry, myrtle and lemon. Cinnamon, cardamon, coriander, juniper, lavender, angelica root, and star anise, are sourced from further afield.
Of particular note, is that the Four Pillars team also use whole oranges in this flavour mix. Not just the peel.
Four Pillars love what they do, and they love what they make!
Navy strength. Well this has to be above 57%: Four Pillars is 58.8%.
The significance? This goes back to the origins of gin, and gunpowder will still light, if soaked in alcohol over a 57% ABV. Important when barrels were being thrown around in stormy seas!
We’d enjoy this neat, but it makes for a fantastic cocktail base, or full bodied G&T!
