Silent Pool is distilled by Silent Pool Distillers, in the heart of the Surrey Hills, on the Albury Estate, right next to the Silent Pool: a spring fed lake.
Their aim is to capture the flavour palette of the area.
The distillery was founded by Ian McCulloch, a former ITV Dirsector, and James Shelbourne, a drinks expert.
Locally sourced ingredients are used to produce the gin, and the team aim to capture the local beauty.
Even before you get to the gin, the bottle, is itself, one of the most beautiful on our bar, in our view.
Its’ aqua colour represents the lake and the gold the moss that crawls across it.
Local spring water is used and the still is fired by hardwood, which is also grown locally.
There are 24 botanicals in Silent Pool gin. These include:
juniper, kaffir lime, lavender, local honey, angelica, cassia, bergamot, bitter orange, cardamom, coriander, cubeb, elderflower, grains of paradise, liquorice, pear, rose petals, linden flowers, orris and chamomile.
These are all macerated for 24 hours, before being transferred to a 250 litre Arnold Holstein copper pot still.
Tom Hutchings is the distiller, and he trialled many ingredients before landing on this fantastic recipe.
We were excited to have the Silent Pool team visit Atlas in August 2016. They presented a brilliant masterclass, to our team, and they are truly enthused about this gin.
Whilst very floral on the nose, there is a lot of hidden spice flavour, which comes through in this gin.
The perfect serve is a premium tonic with either orange or a sprig of mint.
